The market research firm sees chicken on the cusp of strong growth, building on the momentum of previous years with consumers.
“Chicken chains have been resilient amid the pandemic and the menu category remains poised for future growth,” said Aaron Jourden, senior director of global research at Technomic. “With the increasing competition between chicken chains and cross-competitors looking to expand into this category, it is crucial for operators and suppliers to know which chains are the best performing and most dynamic, which are consumer preferences in global markets, what menu trends are emerging. and what strategies chains are adopting in response to the pandemic. “
Among the report’s findings, 84% of consumers worldwide order chicken from a restaurant or eating establishment at least once a month, spicy chicken varieties are common among limited-time offerings (with Nashville hot, Korean and mala among the most influential flavors) and 39% of consumers prefer their grilled chicken rather than fried or roasted.
