The brother and sister duo behind Herbivorous Butcher are opening a 100% vegan fried chicken restaurant in Minneapolis.

Following the success of the vegan butcher’s business, the couple plan to open Herbie Butcher’s Fried Chicken later this spring.

On the menu are buckets of fried chicken, macaroni and cheese, and fried chicken cookie sandwiches – all plant-based.

“Our mission has always been to try to save the world by bridging the gap between omnivores who haven’t quite made the leap to veganism yet,” co-founder Kale Walch said in a statement sent to Plant news.

“By making even better vegan meats and cheeses than they were used to, we are starting to accomplish just that.

“Herbie Butcher’s Fried Chicken continues our brand’s mission by making fried chicken that won’t leave anyone wondering if a plant-based lifestyle is possible without sacrificing the foods we love.

The siblings opened The Herbivorous Butcher in 2016 and have since faced a legal battle for its name.

The exact opening date has not yet been confirmed.
